Recipe 1: Corned beef (or Spam) hash cakes

During the war when meat supplies were running low the Roosevelt signed the Lend Lease agreement agreeing to send much needed supplies to Britain.  Britain was treated to an influx of products such as Spam. Housewives came up with an ingenious way of turning tinned spam or corned beef into a meal by making fritters or hash cakes. So today i'm going to share my corned beef hash cake recipe with you.

Ingredients:
1.2kg Desiree potatoes, whole, unpeeled
350g corned beef (or spam) roughly chopped
2 tablespoons wholegrain mustard
1/4 cup finely chopped chives
1 egg lightly beaten
Oil to fry

Method:
Boil potatoes on a high heat until soft
Drain waster and roughly mash
Add the corned beef (or spam) mustard, chives and egg and stir until combined
Pat into round patties and place on a tray in the fridge for a few hours
Shallow fry in oil until golden brown

I served mine with baked beans!
